Apple Fritters

My mother-in-law was hosting a breakfast and served apple fritters and yogurt parfaits for a few women in her neighborhood. Prior to the breakfast she wanted to practice the apple fritter recipe with our family and I'm so glad she did, all I can say is DELICIOUS!

The whole recipe was very easy. The longest part was peeling and chopping the apples, which only took a few minutes.

I peeled two apples with a potato peeler and then chopped them up with a chopper, any kind will do. Once that was done I added the apples to the other ingredients and VIOLA, you are there!

Follow the exact instructions below and enjoy this delicious and quick treat. The outside was crispy and sweet while the inside of the fritter remained moist and soft. I couldn't have been more pleased, enjoy!


Apple Fritters

Fritter:
1 cup flour
1/4 cup sugar
3/4 teaspoon salt
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/3 cup milk
1 egg
1 cup chopped apple

Glaze:
2 cups powdered sugar
1 tablespoon cinnamon
1/2 tablespoon nutmeg
1 1/2 - 2 tablespoons milk

Combine flour, sugar, salt, baking powder and cinnamon. Stir in milk and egg until just combined. Fold in chopped apple. Pour oil into skillet so that it is approximately 1 1/2 inches deep. Heat oil in high heat. Oil is ready when dough floats to the top. Take about a 1/2 cup full of fritter dough and place it carefully into the oil. Cook until brown, about two minutes and then flip to the other side. Cook another 1-2 minutes, until both sides are browned. Transfer briefly to paper towels to absorb excess oil, then transfer to a cooling rack. Make glaze by stirring milk and powdered sugar together in a small bowl. Drizzle over apple fritters. Wait approximately three minutes for glaze to harden, then flip fritters and drizzle glaze over the other side. Best served warm.
