Cinnamon Wheat Waffles & Caramelized Apples

Cinnamon and nutmeg..a match made in heaven! There is something about the smell and taste of cinnamon during the holidays. It is such a warm and comforting flavor and seems to scream the Christmas season to me. These cinnamon waffles are the perfect Saturday morning breakfast if you want your house to smell like cinnamon, apples, and caramel. Is there a better combination out there? Not to me! Another great bonus..these waffles use healthy food storage items like wheat flour, powdered milk and powdered eggs. A great recipe to help rotate through your food storage favorites! Enjoy ;)

Cinnamon Wheat Waffles & Caramelized Apples
3 1/4 c. water + 2/3 c. powdered milk + 1/4 c. lemon juice (or 3 1/2 c. buttermilk)

1 stick butter, melted

6 eggs
(I used 1/2 real eggs and 1/2 powdered eggs with water combo: 1 T. egg powder+ 2 T. water=1 egg)
2 1/2 c. wheat flour
2 1/2 c. white flour

1 t. vanilla extract

2/3 c. sugar

2 t. cinnamon

1 1/2 t. salt

1 t. nutmeg

2 t. baking soda

3 1/2 t. baking powder

For the waffles, in a large bowl, whisk together the eggs, buttermilk (or water/powdered milk combo), melted butter and vanilla. Add the dry ingredients and continue to whisk until smooth. Preheat waffle maker on medium-high heat. Pour 1/3 c. batter into each well of the waffle maker. Cook 5-6 minutes. Repeat with remaining batter and serve with caramelized apples and whipped cream.
Caramelized Apples (I used apple pie filling, but you can make your own caramel apples with little effort):
3 T. butter
6 fuji or green apples, peeled, cored and cut into
1/4 inch slices

1/2 c. sugar

1 t. cornstarch

1/2 t. cinnamon

1/4 t. nutmeg

1/4 t. salt

2 t. vanilla

To make the apples, in a skillet over medium-high heat, melt 3 T. butter. Add the apple slices, sugar, cornstarch, cinnamon, nutmeg, and salt. Mix until apples are evenly coated. Cook about 18 minutes, stirring occasionally. Remove skillet from heat and stir in vanilla. Set aside until waffles are cooked. Makes 12-14 waffles.
